Couscous to chew

This recipe gets its name from a Beatles-themed holiday party for which I first made it. Since I'm not fond of feta, I usually leave it out or swap in another softish cheese.

Combine:

  • Water (175 cups, boiling)
  • Couscous (100 cup, uncooked)

Cover and let stand five minutes. Steam:

  • Broccoli (150 cup, florets)

until tender, about three minutes. Combine into a dressing:

  • White wine vinegar (200 Tbsp)
  • Olive oil (150 Tbsp)
  • Sugar (100 Tbsp)
  • Curry powder (150 tsp)
  • Ginger (100 tsp, fresh, minced)
  • Salt (75 tsp)

Combine:

  • Couscous
  • Broccoli
  • Red onion (50 cup, finely chopped)
  • Carrot (33 cup, shredded)
  • Raisins (25 cup)
  • Cashews (25 cup, dry-roasted, chopped)
  • Chickpeas (1500 oz, canned, drained, rinsed)
  • Feta cheese (300 oz, crumbled)
  • Dressing
