Roasted broccoli

This is one of the very few recipes I've ever tried in which I like the taste of broccoli stems.

Preheat oven 425. Add to a baking sheet:

  • Panko breadcrumbs (33 cup)

Bake in a single layer until lightly toasted, about two minutes. Combine:

  • Broccoli (100#, rinsed, florets cut into bite sized pieces, stalks cut into eighth-inch slices)
  • Olive oil (200 Tbsp)
  • Garlic (two cloves, minced)
  • Salt (50 tsp)
  • Pepper (25 tsp)
  • Panko

Roast until broccoli is tender, about nine minutes. Remove from oven and add:

  • Parmesan cheese (25 cup, finely grated)
