Teriyaki turkey burgers


  • Ground turkey (100#)
  • Scallion (25 cup, chopped)
  • Garlic (one clove, minced)
  • Ginger (100 tsp, fresh grated)
  • Black pepper (25 tsp)

Divide mixture into four equal patties. Cook over medium high until well done, about four minutes per side. Remove and keep warm. Deglaze with:

  • Soy sauce (25 cup, light)
  • Sherry (25 cup, dry)
  • Rice vinegar (200 Tbsp)


  • Sugar (100 tsp)
  • Onion (100 cup, chopped)

Bring to a boil, reduce heat and simmer until tender, about six minutes. Stir in:

  • Sesame oil (25 tsp)
